Our vision for Bespoke Kitchen was to create an environment that feels very clean, fresh and modern. We want the space to not only compliment Chef Franco Barrio’s style of cooking and plating, but also highlight them, as they will be the spotlights of the restaurant. 

The Bespoke dinner experience will start with the diner selecting from a curated list market fresh vegetables, local fishes and meats. The server will prep the order with three questions from the Chef to hone in on the diner’s taste for the evening to customize the dish. For the diner that enjoys a more traditional approach, the menus will have seasonal appetizer items as well as a variety of pre-selected entreés. 

“Now a days, our food goes from a farm to an obscure industrial food process, then to a supermarket and finally to our tables. We, chefs, have the responsibility to avoid this middle process and to focus/support not just organic food, but sustainable (local) food awareness.” said Chef Franco. 

The menu will take its inspiration from the mix of cuisines that Franco has been exposed to from his various different New York kitchen experiences and global roots. Similarly for Bespoke Kitchen, Chef Franco will draw his insights from a support team on the kitchen line with diverse backgrounds for authenticity. 

Chef Barrio explains, “It is very exciting time to be a chef and to have the opportunity of pairing unexpected flavors and techniques. I hope my menu will allow the diner a chance to travel the world one bite at a time.” 

This is Chef Franco Barrio first solo restaurant in New York. The Casa Mono, Picholine alum and winner of Food Network’s Chopped will bring his unique culinary tailored twist to the West Village. The menu will celebrate contemporary New York cuisine with sustainable farm-to-table dishes that will invite the diner to create or dine along with the chef.

FRANCO BARRIO
EXECUTIVE CHEF


Born and raised in Lima, Peru, Chef Franco Barrio began working in restaurants at age 17. He found a love for cooking in the kitchen with his father. Following high school, he trained in Barcelona, Spain and moved to New York in 2002. 

Joe Bastianich, hired him as a Wine Director’s Assistant and Floor a Manager at Casamono. It’s one of Batali’s restaurants but Executive Chef, Andy Nusser told him: “I can see by the way you look at us cooking that you're dying to be a Chef, go to school and come back to us.” So he did. 

He studied at the French Culinary Institute in New York. Franco’s first line cook job after school was Picholine (under Chef Terrance Brennan) and worked at Quality Meats for Chef Craig Koketsu at the same time. 

He worked at Eleven Madison Park for Chef Daniel Humm but he returned to Barcelona, Spain for research and worked at Cal Pep for Chef Pep. 

He returned to New York as Chef de Cuisine at Boqueria Flatiron working alongside Chef Seamus Mullen, together they opened Boqueria Soho. Boqueria was known for tapas that inspired him from his work in Barcelona. 

After running both those operations, he ventured off to work for Chef David Chang of Momofuku Ssam Bar. He expanded his cuisine knowledge with David. 

Franco also went on to win Food Network’s Chopped in August 2012. Franco has acquired a refined repertoire of cuisines and techniques under the watchful eyes of the nation’s most prestigious chefs. His passion for food goes beyond the kitchens, he has a deep concern for the Food Industry and will only cook with seasonal, local and sustainable foods.
